I am of the understanding that pureblood goblins can only teach gobbledegook, can half-goblins teach other subjects as well?

OKAY SO THE SHORT: YES—there is actually one in canon, though we don't know if he's half or quarter. I'm inclined to believe he is at least quarter given his physical features tho.

THE LONG: Yes, BUT any on staff would have been fired at the conclusion of the 86/87 school year to coincide with the ban on all students who could not prove full humanity. While the student ban was lifted before the end of the following school year, I imagine Hogwarts would have dragged its heels bringing back "halfbreed" teachers. I would say for a position outside of gobbledegook, it would have to be a hiring for the coming school year so the relevent parties can be outraged in real time, and they should stick to elective courses so parents who are too outraged can just have their pReCiOuS aNgElS not take the course!
