History:
Before
Alaric and Luella Oakes live in a modest abode in London. He works as an Auror while she is a seamstress, adept at weaving magic into her clients clothing. After a difficult journey, they finally are able to conceive a child who they name Apollonia Temperance.
Childhood
Like her middle name suggests, Apollonia is a rather calm child when it boils down to it. Of course, she throws tantrums like any other child does when their emotions are too much for them, or they are too tired, but all in all, she grows into a good tempered young girl. By the age of 6, she shows her first sign of magic by changing the color of one of her mothers dresses.
Hogwarts
1870-1875
Going to Hogwarts, Polly knows is a luxury and she intends not to squander it. Their family doesn’t have enough money for all four children and so Polly is determined to make it worth while. She studies hard and makes good grades - good, but not perfect - and though early on she’s told there’s just enough for her to attend until her seventh year, Apollonia always insists on returning home to work after her fifth year so the others might have a chance at attending for at least a few years.
Post-Hogwarts
Just after she leaves Hogwarts, the muggle world discovers the wizarding world and her family have to sacrifice one of her siblings education in order to move to Hogsmeade. There, Apollonia interns alongside a skilled seamstress at Gladrags Wizardwear who teaches her the craft. She enjoys the methodical work and creative outlet it gives her.
Death & a Proposal
Alaric dies. And though mourning is observed she still must go to work every single day. It's on one of those days that Polly befriends a long-time patron of Gladrags Tobias Honeycutt. Admittedly, he is one of her favorite customers; he’s kind, gentle, good humored and a bit of a lonely soul having lost his wife. Both parties take solace in their collective mourning and form an unlikely friendship despite their significant age difference. And though the older man comments a few times throughout their interactions that Apollonia reminds him of his late wife in some ways, she doesn't think much of it. Until one day at Christmastime, Tobias reveals that he's come into potential ownership of The Three Broomsticks, and is looking for a capable person to help him. Additionally, he asks for her hand in marriage. He confides in Apollonia that all he's seeking is a kind companion with whom he could share his business and life. While not entirely shocked, Polly asks in return for time to think about it.
Marriage
In the end, she says yes. She considers Tobias a friend and knows he's a gentle soul. Add to the fact that he’s a class above her, which means she can help her family and their quickly plummeting finances, it's something that the witch knows is a chance she should take. So at the age of 21, Apollonia marries 46 year old Tobias Honeycutt and becomes his wife on January 1, 1880. And unbeknownst to her, at the same time Tobias is given the deed to the Three Broomsticks, he also puts Apollonia's name on it.

It is a marriage of convenience, but a comfortable arrangement for both parties. They fall into a comfortable routine, with Apollonia learning how to manage the books of the pub and the running of the inn. While it isn't the life that she had imagined for herself, it's a peaceful and content one, and Apollonia soon starts to see the future of the Inn as her dream. It came to them a bit worn down, and so she starts to look into renovations and upgrades.
Children, So To Speak
Amongst all the other expectations - or rather lack thereof - in Tobias and Apollonia's marriage, a child had never been in the cards. Through their marriage, the two came to dearly care for one another and comforted each other as friends would, their physical relationship never progressed beyond that (though in the public's eyes, it was always thought that Apollonia did not have the ability to conceive). So a child had never been expected by either of them. This did not mean that they didn't have children to look after, however.

Through the years, they see plenty of street urchins and orphans pass through their doors, for one reason or another. Some try to steal from them, while others merely linger at the edges of the crowds. While Apollonia is always quite stern and protective of her abode when it comes to thievery, this battles with an inherent urge to nurture these poor souls. Her husband is - and always has been - more benevolent. Through his eyes, Apollonia's feelings soften and she comes to care for quite a few of the stray children on Hogsmeade's High Street, either by giving them honest odd jobs (cleaning, errand running etc) or providing them shelter when she can spare the cost. It's during this period that she earns the moniker Miss Honey from the younger children.
Death & Its Will
Leaving the inn and pub in Polly's capable hands, Tobias leaves on a business trip to try and source some more materials for the establishment. He's only gone a week or so when a man shows up on their doorstep with a letter notifying Polly that her husband has been killed as an innocent bystander while the Ministry was trying to apprehend a Dark Wizard. Polly is devastated with this news, both at the loss of one of her best friends, and is then dealt an additional blow when it is revealed that the Inn was meant to pass to Tobias' brother, Elijah who had never taken kindly to Apollonia due to the age gap with his brother.

A week or so passes with Apollonia feeling quite in limbo, unsure of what might happen to her. Finally the meeting with the lawyer and Honeycutt family is scheduled, with Apollonia's presence requested. It's during this meeting that it's revealed that the deed has had Apollonia's name on it ever since she married Tobias, which in turn means that The Three Broomsticks can stay under Apollonia's ownership. Unbeknownst to Apollonia, Elijah had seen the inn as an asset to sell in order to pay off his debts. With this plan ruined, Apollonia's brother in law is furious, and storms out in a rage. This gossip becomes part of the rumor mill in Hogsmeade for the next month or so, and while it's clear everything in the transaction was legally airtight, Elijah still claims that Apollonia had seduced his brother from the start.
Owner & Manager
Though stepping into the shoes as owner and manager proved to be extremely easy, Apollonia still felt the loss of her husband severely, and observed mourning in its entirety (and a little past that). It's now more than ever that she feels the need to see The Three Broomsticks through, and realize its potential and stability as a central hub for Hogsmeade.
